Pina Colada Pork Chops

Marinate in a ziplock:
4 Boneless pork Chops ( approx 3/4 inch thick )
The Juice of 1 - 2 limes

While the pork chops are grilling...

In a saucepan, cook the following on low heat ( Do not boil ):
1/2 cup canned Coconut milk
tiny pinch of Cayenne pepper
Juice of 1 - 2 limes
Salt and Pepper to taste
Cook for 5 minutes

Transfer pork chops to plate.
Spoon sauce over the pork.

* The extra sauce tastes great on rice or as a salad dressing *
