Makes 4 - 6 Servings
Bake 450 Degrees
30 - 45 min
4 lbs - Bone in, Skin on, Chicken Thighs, spit breasts, or drumsticks
Mix and brush under the skin:
3 Tbl - Melted or Softened Butter
1 Tbl - Fresh minced Rosemary
1 tsp - Grated Lemon Zest
1/4 tsp - Salt
1/4 tsp - Pepper
Mix and brush over the skin:
2 Tbl - Melted Butter
Salt and Pepper
Adjust oven rack to Upper Middle position.
Line broiler-pan bottom with foil, and lay the sloted
broiler pan on top.
Arrange chicken, skin side up, on the sloted broiler pan.
Brush on the under-skin mixture.
Brush on the over-skin mixture.
