Mom's Quiche


Buy 2 frozen "shortening" pie crusts.
Or if you are Jan... use the recipe on the back of the Crisco tub to make crusts.
( I'm not that talented ) hehe
Partially Bake them @ 350 and set aside
While they are cooling off, combine:
6 Eggs
1 Lrg carton Heavy Whipping Cream ( the tall skinny one )
( For the store bought crusts, pour in all but the last 1/2 cup )
1 small can diced green chilies
Salt & Pepper
Set aside
Dice up 1 - 2 ham steaks. ( has to be Black Forest Ham if Logan is eating it )
1 if you bought it at Costco.
2 if you had to get it sliced at the deli counter
Place the diced ham in the pie crusts. Just enough to cover the bottoms.
Grate up a package of Swiss Cheese, and use enough to layer all over the ham.
( use the rest later for Omelettes ) =)
Pour the cream mixture into both pies.
( put your pies on a cookie sheet first, just incase they bubble during cooking )
Cover crust with foil.
Bake at 350
45 - 55 minutes
