In a Large bowl, combine:
2 1/2 cup Flour
1 cup Sweetened Coconut
1 cup Brown Sugar
1 tsp Baking Soda
Cut in 1/2 cup butter until mixture is crumbly.
( Set aside 1 cup of crumb mixture for the topping. )
Press remaining mixture into bottom of a greased 13 x 9 inch pan.
Bake for 10 minutes.
In a medium bowl, beat until creamy:
1/2 cup Butter
1 cup Sugar
Then Add:
3 Lrg Eggs ( one at a time )
1 cup Flour ( gradually )
Stir in:
1 - 20 oz can Crushed Pineapple
Spread Pineapple mixture evenly over baked crust.
Sprinkle evenly with reserved crumb mixture.
Bake.
Cool completely before cutting into squares.
Garnish with toasted coconut flakes ( optional )
