Brownie Cookies

In a double boiler, placed over ( but not touching ) simmering water,
Heat: 4 oz Chopped, Unsweatened Chocolate
1/4 cup Unsalted Butter
Stir often until completely melted.
Set aside to cool slightly.


In a Large bowl, combine:
4 Lrg Eggs
2 Cups Granulated Sugar
1 tsp Vanilla
Beat on medium speed until it thickens
approx 3-4 minutes.


In a seperate bowl, combine:
1 1/2 cups Flour
1/2 cup Cocoa powder
( For a twist, use Dutch or German cocoa powder )
2 tsp Baking Powder
1/4 tsp Salt ( or Seasalt )


Add the melted Chocolate slowly to the wet mixture.
Next, add the dry mixture.
Then, add 1 1/2 cups semi-sweet Chocolate Chips.
Refrigerate for about an hour, or until the dough is
stiff enough to roll into balls.


Preheat oven to 325
Line cookie sheet with parchment paper.
Roll a teaspoon of dough into a ball.
Roll the ball in powdered sugar.
Place on cookie sheet. Do not flatten balls
before cooking. Leave enough room for them to
spread during cooking.


Bake for 12-15 minutes.
Let them cool for a minute or 2,
on the pan before moving them.
* cool cookies, then put in an air-tight container or
ziplocks. Do not leave them out or they will get hard *
