Corn Chowder

1/2 onion finely chopped
olive oil
1 ten oz bag frozen corn
1 can minced clams
2 cups milk
1/4 tsp thyme
1 1/2 cups frozen hash browns
a couple slices Canadian bacon
sourdough/french bread bowls
salt and pepper to taste
Serves 4

In skillet warm chopped Canadian bacon and set aside. In same skillet use a little olive oil and saute onions. Add hash browns and corn, and use the juice from the clams only to add moisture. Simmer for 8 minutes or until potatoes are tender. Add milk, clams, thyme and salt and pepper. Simmer together for two minutes or more. Serve in bread bowls with Canadian bacon as a garnish. Mmmm cozy and easy!
