1-2lbs ground beef
1 can chopped green chilies
12-15 corn tortillas
2 cups grated Mexican style cheese
Olive oil
1 can pinto beans(optional)
1 big 28oz can (Divided) Hatch's enchilada sauce, Las Palmas will do if Hatch is not available~
Brown ground beef and drain. Add a small part of your enchilada sauce to your beef, your can of green chili, and your beans in a saucepan to simmer. In a frying pan or skillet warm olive oil and fry each side of your corn tortillas and set aside on paper towel. Make a few extra for helpers that pass by. After frying tortillas, place beef mixture and a little cheese in each tortilla, roll and place in 9x13 pan. Pour the rest of enchilada sauce over the top of rolled enchiladas and top with the rest of the cheese.
Bake 350 F for 25-30 minutes
