4 or 5 large chicken breasts on the bone (or 1 whole boiling chicken, but removing all the bones isn't too fun after it has been boiled!)
Enough water to cover the chicken in a large pot. Bring to a boil.
Boil chicken until done, remove chicken from pot and dice in bite size pieces (toss the bones)
Save the "chicken water" and strain through a strainer to remove what ever floats about.
Add the diced chicken back into the strained "chicken water". Add a can of chicken broth.
This is also when I add any seasoning. Go to your spice rack and have fun!!
Bring "chicken water" with chicken, seasoning, and broth back to a boil. Add slivered carrots, frozen corn, or any other veggie that you like (green beans don't work and I never liked peas!)
In smaller sauce pan melt one cube of butter and then slowly add 1/2 cup flour. When this mixture thickens (using wisk to stir) slowly add half and half (about 1 cup or so...) When this mixture is smooth, before it boils much, add to chicken pot. Stir until creamed mixture is well incorporated with both. Taste and add what ever more seasoning you need.
Serve hot over fresh mashed potatoes, or cooked white rice.
Make sure that Logan gets a second helping...
