Turkey Tortilla Soup

2 cups leftover dark and light Thanksgiving Turkey meat
1 1/2 cups organic medium salsa(available at Costco)
1/2 package frozen corn
1 can chicken broth
2 Tbls taco seasoning
4-6 corn tortillas torn in small pieces
1 cup shredded cheese (Colby Jack or Mexican blend)


Shred turkey into small pieces. In sauce pan heat turkey,chicken broth, salsa, taco seasoning and corn. Bring to a boil stirring often, add torn tortillas and let it simmer for a few minutes. Top with cheese before serving. A spicy Turkey leftover alternative.:)

Makes 4-6 servings
