Butter fly cut open as many "Costco" pork cutlets as needed
With your fingers, coat both sides of each pork cutlet with dijon mustard (thin layer)
Sprinkle each cutlet with montreal steak seasoning
Coat each cutlet, both sides, with Italian Bread Crumbs
Preheat oven to 350 degrees
Preheat large skillet (preferrably grill type) and add enough olive oil to fry the cutlets.
Fry each cutlet on both sides until brown and crispy. Then remove from frying skillet.
Place fried cutlets in oven at 350 degrees for about 15 to 20 minutes. (For large amounts use cookie sheet covered with foil to place cutlets in oven--try not to overlap meat.)
Gravy can be made with drippings in frying pan if needed. Use jar to shake 3 T flour and 1/2 cup water (more or less) stir in browned dripping, wisking until well incorporated. Add half and half to mixture to get needed consistancy.
