3 cups flour
2 cups sugar
2/3 cup vegetable oil
1/2 cup chopped pecans
2 very ripe large mashed bananas
One 8oz can crushed pineapple, with juice
1/2 cup shredded coconut (option for Logan)
1 tsp. vanilla
1 tsp ground cinnamon
4 large beaten eggs
Preheat oven to 325 degrees. Grease and flour three 8 inch round pans or one 9x13 baking pan.
In large mixing bowl, combine all ingredients. Stir well with spoon until mixture is smooth. Pour into prepared pans and bake 26 to 30 minutes or until top springs back. Let cool for 10 minutes and remove from pans. After cooled ice with below icing.
1 box powered sugar
One 8oz package of cream cheese at room temperature
6 Tbls of softened butter
1 tsp vanilla extract
1 Tbl milk or more if needed
Chopped pecans to sprinkle on top of cake
Cream first 5 ingredients in bowl with electric mixer. If mixture is not "spreadable" add more milk 1 tsp at a time until proper spreading consistency. Ice cake and sprinkle chopped pecans on top of cake
