Peal and cut 6 to 8 red potatoes
Place in slightly salted water, bring to a boil and cook until done
Meanwhile chop up fine (about 1/3 " chunks)
1 zucchini squash
1 yellow summer squash
1/3 sweet onion (can be purple or yellow)
1 large fresh carrot
1 clove minced garlic
Place veggies in small pot with water to cover. Add 2 T butter and seasoning. Bring to simmer and cook until done...don't let them get mushy.
When red pototoes are done mash them using a T or two of butter and a little half & half. Drain veggies and stir carefully unto finished mashed pototoes.
Serve with a large pat of butter on top and some extra seasoning (if your cholesteral can talke it!)
